Hershey’s Ultimate Double Chocolate Brownies are an unabashed brownie, a bit forward, maybe even impertinent in their rich, chocolate taste. If these brownies were a person, they’d be Melissa McCarthy in Identity Crisis. A bit loud; bordering on obnoxious and a little messy around the edges.

Not a pretty, refined, well-behaved brownie, Hersheys Ultimate Double Chocolate Brownies are deeply chocolate, heavy in the hand, and a bit fudgy chewy, with that classic, shiny, crinkly top that’s the hallmark of a great brownie. They are my dream of the perfect brownie, and I think you’ll like them, too.

When you eat Hershey’s Ultimate Double Chocolate Brownie, you’ll want to have milk on hand. Lots of milk. They are just that rich. Deep, dark, luscious and rich. There’s a story behind these brownies, but first a warning: Be careful to whom you serve these; a gentleman once proposed to me after one of these. (Disclaimer: Your results may vary.)

When I was just a youngster, I found this recipe on the back of a Hersheys cocoa can (yes, cocoa used to come in actual cans) and they became my one and only brownie. My true love. One day I picked up a can and the recipe was no longer there, replaced by another. Every time I bought cocoa I’d search through all the cans to no avail. For years I searched.

Fast forward to when the internet became available. The search began, anew, but in vain. I kept hoping some cook would put the recipe online, but it never happened. (I knew I would recognize it because the technique is so unusual.)

Finally, I was rewarded in my diligence! Hershey’s published an archive of recipes and I found my brownie – and it did not disappoint. The only thing I wonder about, to this day? What if I had accepted that proposal? Would the gentleman in question have felt cheated in not having those brownies for all those years? I know I felt as if I had been!

Making the Brownies:

I hate to simply publish a recipe put out by a company like Hershey’s when it’s now so easily found on their site, but over the years it has become such an “expected” recipe for me to bring places, I know my friends and family will love seeing it here. It was my go-to recipe from the 1970s through the 1990s and now it is my go-to recipe again!

Like most brownies, this recipe for Hershey’s Ultimate Double Chocolate Brownies is pretty easy, but it does have a couple of extra steps.

  • One is that the recipe uses melted butter which is not only responsible in part, for the great flavor, it is also responsible for the shiny, crinkly crust.
  • The other thing is the boiling water. See, the cocoa is bloomed in boiling water, and ever since I first made these brownies, whenever I see a recipe that calls for using boiling water (or hot coffee) and cocoa, I know it’s going to have amazing chocolate flavor.
  • Another recipe on my site that blooms the cocoa is my easy Cafe Latte’s Mabel’s Chocolate Turtle Cake. That recipe just adds hot coffee towards the end of mixing.

And of course, as you look through the ingredients, it’s easy to see that this recipe is double chocolate. First, there is the cocoa powder, and a good amount of it, then there are the chocolate chips, just for good measure.

The chocolate chips pretty much melt in, which is a good thing. If you do chop any chocolate pieces for your brownies, you won’t want to add any dust or slivers; it’s just too much of a good thing. Small bits and pieces can make the brownies seem oily. It’s best to stick with the standard size of chocolate chips. I think it’s best to use semi-sweet, too. I’ve tried all the others but I always go back to the original recipe. It is the way to go, trust me on this.

Saving Money on Hershey’s Ultimate Double Chocolate Brownies:

It’s funny but while most homemade items are always more inexpensive to make, brownies and cakes can be a bit of an exception. That is if you buy one of the basic boxes, especially on sale, and especially with a coupon. Of course, for some mixes, you need to add oil and butter. I’d def compare Hersheys Ultimate Double Chocolate Brownies with the premium brownies that have chocolate chips just like this recipe does. Then, if you’re a good shopper you’ll be better off with homemade – both in taste and in cost.

Do shop well for your baking items. If you like name brands, shop the Holiday sales and stock up. If you can’t do that for some reason, check both Aldi or Lidl or your buyer’s club. Keep in mind that everything will be in larger bags at Costco or Sam’s. The prices at any of these places usually rival the best grocery store sales prices. They’ll always beat out the everyday store prices.

In today’s economy, so many people have had to cut back on their groceries. It pays to do so, but it also pays to make sure you are getting the best pricing for what you do buy. And as far as desserts go, brownies, especially home made ones, are one of the big crowd pleasers and still able to be made at a reasonable price.

Hershey’s Ultimate Double Chocolate Brownie

Ingredients

Scale
  • 3/4 cup cocoa – do not use Dutch processed or a mix of Dutch Process and Natural, just use regular old Natural cocoa powder (Hershey’s or Nestlé’s)
  • 1/2 teaspoon baking soda
  • 2/3 cup butter, melted and divided into two portions
  • 1/2 cup boiling water (bring about a cup of water to a boil, then measure out the 1/2 cup)
  • 2 cups sugar
  • 2 eggs
  • 1 1/3 cup flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 cup chocolate chips, preferable semi-sweet or dark or about a cup of larger pieces of chocolate can be folded in at the end instead
  • 1/2 cup of pecans, if desired, optional. Stir in with chips.

Instructions

Grease a 9 x 13″ pan. Preheat oven to 350 degrees. Bring a cup of water to boil.

Stir cocoa and soda together in large bowl. Add 1/3 cup of the melted butter and stir in. Add 1/2 cup boiling water and stir until thickened.

Stir in sugar, eggs, and the remaining butter until smooth. Add flour, vanilla, and salt. Fold in chocolate chips.

Bake 35 -40 minutes until brownies begin to pull away from the sides of the pan. Do NOT overbake. A “toothpick” test will not work. The brownies are done when they just start to pull away from the edge of the pan. Cool completely in pan, then cut.

Makes about 24 brownies if cut three across the short side, eight along the length.

Dust with powdered sugar if desired; lovely served with vanilla ice-cream.

Notes:

  • Using smaller bits of chocolate (for instance, if you cut your own and add the shavings along with the chunks) can make the brownies greasy.
  • My favorite chip to use in this recipe is the Ghiradelli chip because they’re a bit larger than Tollhouse.

Kitchen & Cooking Hack:

Did you know that if you bake in a glass pan when the recipe doesn’t specify to do so, that the oven temperature should be turned down by 25 degrees? that will compensate for the difference in the materials.

    Very good recipe-nice and chocolate-y. I may have slightly overcooked mine (against your warning.) I used regular chocolate chips and added walnuts for my husband. I’ll definitely avoid using a mix from now on (in my area I never see the mixes for less than 1.89.) Since I normally have all the ingredients to make them, it doesn’t even make sense to buy a mix that has things I don’t want in it. We usually make brownies and frost them instead of a cake for birthdays because we don’t like cake. This recipe will really be put to good use.Thanks–Nice and useful blog. C. Hennes
